Quinoa Tabouli


With its burst of lemon flavor, this fresh and delicious  quinoa recipe is always a big hit.
Ingredients:
2 cups cooked quinoa (according to package)
5 tomatoes, chopped
1 small red onion, chopped
1 cup fresh chopped parsley
1/2 cup freshly squeezed lemon juice (or to taste)
3 Tbsp extra-virgin olive oil
1 Tbsp. kosher salt
White pepper (to taste)
 
Mix together quinoa, tomato, red onion and parsley. Add lemon juice and olive oil. Season with salt and pepper, to taste.
NOTE: For stronger lemon flavor, add more lemon juice.
