Zucchini Kishka Kugel


This recipe is so pretty and easy to make.  I use a Pyrex dish so the different color layers are visible.  I have even used the same kishka recipe inside chicken cutlets; I roll them up, glaze them with duck sauce and bake for 20 minutes at 350 degrees, uncovered.
 
Kishka layer:
Ingredients:
1 carrot
1 potato
1 stalk celery
1 small onion
1/3 cup oil
5 Tbsp. potato starch
½ tsp. salt
1 ½ tsp. paprika
 
Peel and grate all the vegetables. Combine the remaining ingredients with the grated vegetables. Pour into 8×8 inch square pan. Bake at 350 degrees for 25 minutes.
 
Zucchini layer:
1 onion
2 medium zucchini – do not peel
2 eggs
¼ cup potato starch
2 Tbsp. mayonnaise
½ tsp. onion powder
¼ tsp. salt
 
Grate  the vegetables. Add remaining ingredients and pour over baked kishka layer. Bake additional 45 min at 350 degrees.
